Bordered is a Vanilla plus survival server on 1.20.1 and it just opened this week. It feels like a normal Minecraft world but with a few big twists that make it way more intense.
The world border starts small at 500 by 500 and it grows every time a new player joins. That makes the start feel crowded and dangerous then it slowly opens up as more people show up.
It also has an origins system with lots of custom picks and the owner is still taking suggestions. The big mode is lifesteal where killing a player takes one of their hearts and gives it to you. If you die to the environment you do not lose hearts so fights matter the most.

I found Toxic Network and it is a fresh modded PVP place on Minecraft 1.20.1.
They are running two servers right now with Prominence II and Soulrend. The Prominence II version is 3.9.17 and the Soulrend version is 7.3.2.

CaveMC is a semi anarchy survival server that feels like vanilla but tougher. The wild part is the entire overworld is underground so there is no surface at all. It is just caves forever with biomes resources and structures all down there.
Season 2 is live with a fresh start and more stuff to do. Survival is brutal and you have to be smart to make it.
They also added a big expansion called the Wasteland Dimension. It has new gear to fight over huge mega structures with secrets and a unique currency that pushes a player driven economy. The other world is small like 500×500. It is protected with no PVP and you can claim land so it cannot be griefed. Automatic farms are not allowed there and this world does not reset.

I found Anarchy Network and it is a semi anarchy survival server that tries to feel like real Vanilla Minecraft. It launched on October 11th 2024 and it is hosted in New York City.
The server stays online all the time and it lets you join on Java versions from 1.7.2 up to 1.21.11. They recommend 1.21.10 so stuff works smoother.
The world is huge with a 2 million block border and it does not reset. There is no pay to win and there is no teleporting. Griefing and PvP are allowed so you can expect fights and ruined bases.
The only extra stuff is a spawn command so people far out can get back. Nether roof is allowed phantoms are removed and only half the players are needed to skip night.

I found Ratchy SMP and it is a survival server that is mostly vanilla but it uses modpacks too.
The main one mentioned is Lifesteal so players can take hearts and you can also turn hearts into items with a simple command.
