I found a survival server called CaveMC that is semi anarchy and feels like enhanced vanilla. The whole overworld is underground so there is no surface at all. It uses custom world generation made by real Minecraft developers and the caves stretch forever with biomes resources and structures.
The vibe is brutal survival and you really have to be resourceful to make it. Season 2 is a fresh start with a bunch of additions.
There is also a Wasteland Dimension that opens on November 8th. It brings brand new gear to fight over plus huge mega structures with mysteries and valuable stuff. The server runs 24 7 and you can join with Java versions from 1.7.2 up to 1.21.11. They recommend using 1.21.10 so you do not have random issues. The world border is huge at 2 million blocks so there is tons of room to explore and hide.
The gameplay is very simple. There are no map resets and no teleport commands. There is no pay to win at all. Griefing is allowed and PvP is fully allowed too. The only special command is spawn so players who went really far away can come back to civilization. Nether roof access is allowed. Phantoms are removed. Only half the players online need to sleep to skip the night.
There are a few rules to keep things playable. Exploits are not allowed. Lag machines and duping are banned. You cannot spam chat and you cannot harass people or use racial slurs. Outside of that it is mostly up to the players and how they want to survive.

This server is really weird because items are not dropping at all. When you break stuff it just vanishes and it makes the game feel super hard.
From what I can see it is running Paper and only has a few plugins. It feels kind of like a test world where the owner is trying to figure out what is wrong.
If you like strange problems and trying to fix them this server is actually kind of interesting. You have to think about every block you break and you might need to help the owner find what is going on.
It is not a normal survival server but more like a challenge where you deal with no item drops and try to survive anyway.
