I found LegionCraft and it is a OneBlock server that is all about grinding and getting stronger.
It says there is no pay to win so you win by skill and time played.
The big thing here is the bosses. You fight them and try to get rare key drops. Those keys can open crates and the crates give powerful gear and big rewards.
It also has a custom OneBlock world where you expand as you grind. It supports crossplay and there is a Bedrock port too.
