I found SlashMC and it is an Earth SMP that works on both Java and Bedrock. It is made for Minecraft 1.21 and up and it feels built for a long term survival world.
The main thing is a full scale Earth map so exploring actually matters. It also has separate resource worlds so you can gather materials without messing up the main world too much.
There is land claiming so you can protect your area and manage your territory. The server also leans into meaningful progression with quality of life changes and it pushes cooperation and strategy.
