I found a modded SMP called Mech Rehabilitated and it feels like a small friendly place that stays active. It is the kind of server you can hop on after work or classes and just relax or go totally wild.
The modpack has over 300 mods so there is a lot to do. People can explore and loot huge structures then go fight bosses and chase big power. If you are more of a farmer type there are lots of recipes and cooking stuff too.

Bordered is a new Vanilla plus survival server on 1.20.1 with a twist that changes the whole world feel.
The world border starts small at 500 by 500 and it grows every time someone joins. That means the map opens up as the community grows so early players get a real head start.
It also runs Origins so you can pick from lots of custom options and the owner is still taking suggestions. There is Lifesteal too so if you kill a player they lose a heart and you gain it. If you die to the environment you do not lose hearts.
It is opening 2 6 and people can join now for testing.

The world uses Tectonic generation so the land looks big and realistic with mountains and valleys. The community is meant to be calm and friendly so you can build grind explore or just vibe.

This server is a brand new survival SMP and it is not chill at all. The whole idea is drama conflict and power and it feels like everything you do will come back later.
The world has a border so everyone ends up living close together. Towns can pop up right next to enemies and that makes alliances happen fast then fall apart even faster.
There is no world protection here. Everything is player enforced so if your town survives it is because you defended it. If it falls that is on you.
It is hard capped at 35 players so it stays personal and your name actually matters. Whitelist is required. Versions supported are 1.16 to 1.21.11.
