I found Lumi Hardcore and it is a hardcore survival SMP where survival actually matters. The vibe is calm and cozy until you mess up.
It is one life only. If you die you get sent to spectator mode and you stay there until the next reset. There are no revives and no second chances.
The world resets every 60 days with a new seed each season so everyone starts equal. It stays mostly vanilla but it has some extra stuff for building and quality of life like Jake’s Build Tools DecoPlus FurniCraft VeinMiner and a tree vein miner.

I found a semi vanilla PvP server that is inspired by StrengthSMP and it is all about getting stronger from fights.
When you kill players you get a strength boost and if you drop down to minus 10 strength you get eliminated with a ban. There is also a revive beacon system so other players can bring you back with an unban.
It has a custom spawn and a custom nether portal area plus a massive 100k by 100k worldborder so there is tons of room to play. The server started on the first of janurary and the owner says events can happen once more players join.
