I found Tidefall Network and it feels like one of those big Australian servers that tries to have something for everyone. Since it is hosted in Australia it should feel smooth and low lag if you are nearby.
It has a bunch of modes like Kit PvP for quick fighting and Factions for base building and big wars. There is also Lifesteal where losing fights can really hurt because your hearts matter a lot. If you like teams there is Bedwars and if you just want normal Minecraft there is Survival with extra custom stuff.
There is OneBlock where you start from one block and build up your island over time. There is Parkour too with different courses to try.
The economy is not just about selling items in shops and getting rich the same way every day. It sounds like there are other ways to earn money so it stays more interesting.
They say the server is actively maintained and updated a lot and the community is friendly for new players and veterans. It supports 1.21x and the server version is 1.21.11.
