Legends of Stonehaven is a medieval and fantasy RPG server running Season 2. It is based on a Fantasy Medieval RPG modpack and it launched on Thursday 19th March.
Combat is heavily revamped with new animations and a dodge mechanic. You also get an in depth skill tree and origins so your character build can feel different from other players. There are custom weapons armor trinkets bosses origins and divine blessings that are balanced for this pack.
The world is made for exploring since the overworld nether and end generation are overhauled. There are hundreds of new dungeons and structures plus 5 new dimensions. Enemies also scale up as you go further out so it stays challenging.
There are over 200 quests you can do solo or with friends and some add story and lore. A quest shop lets you spend coins on useful items. The server also cares about performance and has lots of QoL stuff like backpacks and storage systems.

I found a modded Minecraft server running 1.20.1 that is built around fantasy progression and RPG stuff like races classes and leveling.
It is hosted on dedicated hardware in Europe Belarus and it also uses a proxy through Germany to help players from far away get better ping. The server says it holds around 20 tps on average.
The pack has RP Enhanced plus Lootr and Voice Chat. Teleports are restricted so you travel more using spells waystones and elytras. You start with free waystones and you can get free bandage kits every 12 hours.
There is fantasy worldgen with biomes and you can run into orcs goblins and dragons. It also has Minecolonies with the Byzantine Styles Pack and Immersive Quests. It says no pay2win and it stays up as long as there is at least one active player with modpack rotation when it goes inactive.

I found a modded SMP that is growing fast and trying to build a fantasy world with real lore. The story is about dragons and monsters and the land is full of them.
It uses Ice and Fire so you can look for dragons fight them and even tame them. You can try being a monarch with a kingdom or a warrior or just run a tavern and do your own thing.
There are multiple nations close to each other and they want builders fighters redstoners and more. There are also other monsters plus custom structures and dungeons to explore.
The world border is kept fairly small so players stay near each other and it will expand over time. Players are pushed to form settlements and houses with other players.
PVP is allowed but random nonstop killing is not the vibe and can get you punished. PVP is mostly for planned war stuff though some shenanigans are still welcome. The server is whitelist only so you have to apply.

I found a newer server that is built around a custom tech and magic modpack and it is meant to last a long time. The main vibe is role play and RPG style survival with a big community focus.

Delve is an 18+ text based Minecraft roleplay server on Java Edition and it is modded. The world is getting messed up by strange dungeons that keep forming and people are trying to figure out why it is happening.
The setting is the year 1710 and it feels like your homeland is falling apart. Your character is one of many who leave to search for a safer place and for answers.
There are nine official races with their own history and culture. Borders split everyone up but the groups have to work together if they want a new home.
There are no classes. You build your character with a big skill tree with 183 skills so everyone ends up different.
The main server is not open yet but the community is getting started now.
