This is a semi vanilla SMP called WhimsyWillow and it feels pretty cozy. The server is still kind of new so there is a lot of fresh land to explore. The terrain generation is really cool and there are over 100 different biomes so it always feels like you are finding something new.

New Haven is a modded survival server that feels like a big project where everyone can help shape the world. The owner really cares about what players think and actually reads suggestion channels and event ideas.

Cozy MC is a survival world that is meant to last longer than just a few days. It is a hard survival server with no mods and no addons. The world is long term and there are no planned resets so you can actually build a base and keep it.

Creation Network is a new RPG style Minecraft server that just went into beta. I joined to check it out and the first gamemode is all about using elements.
You get special abilities that are based on the four elements. It is not a normal bending copy. They have custom abilities that are only on this server so it feels different from other element servers I played.

This server is called CaveMC and it is on Season 2. It is a semi anarchy survival server where the whole overworld is underground. There is no surface at all. Everything is caves with different biomes resources and structures.
The gameplay feels way harder than normal survival. You have to be really smart to survive because it is brutal and there is not much safety. It is still kind of vanilla but it has a lot of custom world generation made by real Minecraft developers so it feels unique.

Beauty in Blocks is a hardened survival server that feels really focused on immersion discovery and making the world look cool. The world is shaped with mods that add crazy terrain new realms and more natural feeling biomes so exploring actually feels fresh.
The server uses a new land claim system called Flan. You start with a small amount of claim space and it grows the longer you play. Claims go below the surface too so you do not randomly hit weird walls underground.
Voice chat is a big deal here. It is proximity based so people hear you if they are close. Even skulk and mobs can react to your voice so you have to think before you yell while caving or fighting.

This is a Hermitcraft style SMP that just started so the world is still really fresh. It feels like a long term survival place where people want to build cool bases and big projects together and not just rush everything alone.
The server is close to pure vanilla and runs on version 1.21.9. There is proximity voice chat and a player run shopping district so everyone can make shops and trade. They also use a few datapacks like durability pings armor stand statues more mob heads double shulker shells and stuff like that so it still feels vanilla but a bit nicer.
