NostalgiaCraft is a vanilla style SMP that feels like the old days where you just play with friends and build whatever you want.
It has rules against griefing and there is a protected spawn with active staff. The world has been running since 2020 and they say there are no resets so your builds are meant to stick around.
The map is huge with a 300k by 300k world. They keep it running smooth and talk about staying at 20 TPS on dedicated hardware.
The economy stays simple with player shops and trading and no plugin money. It is mostly vanilla plus with a few quality of life commands like sethome spawn and toggling phantoms.
You can join on both Java and Bedrock and it is updated to 1.21.11. They also use a graylist system so you can join fast but spawn is the safest area while the rest is normal survival with no griefing allowed.

Zest Creative is a longtime creative city build server with a tight knit active community. The world uses a very large custom terrain map and people build cities together over time.
To get in you join the discord first and do a short application. It is mainly there to filter out griefers. After that you can earn access to WorldEdit and other helpful commands and really show what you can do.
Roleplay is optional but it is there if you want it. Players do geopolitical RP and lore and worldbuilding as the world grows. You can mark a claim and staff will show it on the map then you can start your story. You can also mark towns and settlements.
