This server is a survival world that is built for long term progression and it is not pay to win.
I found custom dungeons here and they have real boss mechanics so it feels more like a proper fight and not just a normal mob.

Nomonom SMP is a Java survival server on 1.21.11 and it is still early so the worlds are not heavily used right now. It feels like the server is meant to last and not just a quick rush to the end.
It has an economy and plots for building and dungeons to explore. PvP is a big thing here with KOTH and duels and they want more PvP players to join. The arenas and duels are getting improved over time.
