V Kingdoms Season 2 is a private community SMP with a pretty solid player count that can dip during EU work and school hours but gets much busier later. The discord is active and you need to get whitelisted to join.
It runs Towny style town building with protected storage using sign based chest locks. There is a grave system so when you die your items stay in a grave for about 3 hours before they are gone and other players can take them.
The server has custom weapons and artifacts plus a few guns. There is a simple economy that is still being updated. Voice chat is mandatory using Simple Voice Chat and you also need Fabric and Fabric API.
There are custom bosses where some can spawn naturally and some get summoned by admins. There is also a war mechanic in progress that works like raids where attackers try to break a beacon before time runs out and defenders can keep respawning while the beacon is active.
The server started around 10 days ago. It has anti xray and it is based in Europe. The Nether is open and the End is still closed.

It also supports cracked Minecraft so you can still play even if you do not have premium. There is home and chest protection so your base and items can stay safe.

Posalon is a worldbuilding server where players make nations and write the story together. It has been running as an active project for over a month and there is a community that keeps it moving.
Right now wars have started and nations are going at each other. You can start your own nation build towns and create your place in the world or you can pick a side and jump into the next fight.
Movecraft is the main feature and it lets players build working tanks planes ships and submarines out of blocks. That means big battles on land and in the air and at sea. The server also uses Brewery X plus lands guns a stock market and shops.
It does not feel like it is only about conquering. It is more about building a long history together and watching events stack up over time. Crossplay is supported too.

EchelonMC is a fully custom survival server for Minecraft Java and it is made for long term building and teamwork. It is hosted in Canada and it has been in active development for about a month with frequent updates.
It is not trying to be a PvP chaos server. Stealing and griefing are not the point here. The server is built around players working together and shaping how things grow over time.
It has custom coded systems like auto pathing that makes paths under you and gives speed bonuses if you use them and you can toggle it. There is also an in game currency called Echelites that you earn by playing and you can spend it on progression and useful quality of life stuff.
Land claiming is a big deal here with visual borders and per chunk settings plus anti grief protection and controls for things like mobs and TNT and fire spread and raids and fluids. You can also publish chunks so other people can visit your builds and you can get rewards from visitors and move up build rankings.
There is a teams system so you can invite friends share utilities and show team nametags. Deaths make timed graves for your items and there is a /back feature to help you recover after teleports. Voting rewards are built in and there is Discord linking with a chat bridge plus anti x ray protections and a spawn hub with NPC utilities.
