I found Amethyst SMP and it is a 1.21 survival server that tries to keep things fun and fair. It is meant to feel actually vanilla with no pay to win stuff.
It has chest shops with a player driven economy using QuickShop so people can trade and build up their own money. There is also a live map so you can watch the world change.
You can claim land so your builds stay protected. The Nether resets every two weeks so resources stay fresh. The server is in beta so it feels like a good time to join early and help shape the community before full launch.
