I found Altar SMP and it is a new SMP that is about to start.
It is starting tomorrow so it feels like a good time to join early and not be behind.
They say it is going to be big and it has good plugins so it should be a solid setup for survival.

Durian SMP is a brand new server that is about to open soon. It is planned for Minecraft 1.21.11 and they are still gathering players right now.
From what I saw it is almost completely vanilla. It has optional Simple Voice Chat if you want it and it also uses some server side performance mods.
