I found Lumi Hardcore and it is a Hardcore Survival SMP where you only get one life. The world does a fresh reset and it runs in 60 day seasons so everyone gets a fair start.
If you die you are out and you go into spectator mode until the next reset. The server is mostly vanilla and you do not need mods so it still feels like normal Minecraft but way more tense.
It uses a small set of lightweight datapacks to keep things clean and immersive. Deaths get a lightning strike and there are global death messages.
