I found a very early alpha server that is all about late medieval faction warfare with RPG style progression and a player driven economy.
You are not stuck doing one thing the whole time. You can go all in on faction PvP. You can grind like an MMO. Or you can play more independent as a trader gatherer craftsman or contractor who supplies factions and builds for other players.
It has custom crops and custom weapons and armor with special effects. The mobs are stronger than vanilla and there are boss mobs that push you to team up. The economy uses mixed currencies and there is a secure MMO style trading window so trading feels safer.
Players spawn at a main market hub called Osthaven where people buy and sell. You can also set up temporary wilderness camps protected with WorldGuard to help with hunting gathering and travel.
Since it is early alpha they want testers who will try mechanics find bugs check balance and give honest feedback.

ArcticMC SMP is a new survival server that mixes Towny with factions so you can build a town then team up with others or claim land for yourself.
PVP matters here but it is not meant to be toxic. They use an honor system for fights and it is explained in their Discord rules.
You can level up with McMMO skills while you mine fight and do other stuff. There are also custom items and even furniture. The furniture is entity based so they plan to limit how much can be placed in a chunk to help with lag.
The world uses Tectonic generation so the terrain looks big and realistic with mountains and valleys. The community is described as calm and friendly so it feels more like a place to chill and build.

CaveMC is a semi anarchy survival server with an enhanced vanilla feel. The big twist is the overworld is fully underground. There is no surface at all so everything happens in caves and underground biomes with resources and structures.
Season 2 is a fresh start with new additions. The server is meant to be brutal so you have to be smart if you want to last.
It also adds a Wasteland Dimension that opens on November 8th. It has its own custom generated map plus giant mega structures and mysteries to explore. There is new exclusive gear to fight over and a unique currency that sets up a player driven economy and trading. There is also a new spawn made for the Wasteland challenge.

Legends of Stonehaven is a medieval fantasy RPG server running Season 2 based on Ciscos Fantasy Medieval RPG Ultimate modpack.
Combat feels totally different here with animations and a dodge mechanic. You can build your character with origins and a deep skill tree so everyone ends up feeling strong in their own way.
There are custom weapons armor trinkets bosses and divine blessings balanced around this pack. Mobs scale up as you travel farther so exploring keeps getting tougher.

Stormy Lagoon is a fair long term SMP that supports Java and Bedrock crossplay. It is built to feel balanced and it stays away from pay to win since ranks and perks can be earned.
The server has custom progression with Stormy Items where you can level up your tools weapons and armor and get abilities. There are daily missions and weekly challenges that reward Pearls plus milestones for long term progress and a Pearl shop where you can spend what you earn on perks ranks and cosmetics.
Gameplay has mcMMO skills for things like combat mining and fishing. The economy is player driven so people can buy sell and trade. You also get activity based rewards like Pearls Diamonds and rank progress and you can rank up just by playtime.

I found a small server called 30Timers and it feels like survival but way more chaotic. Every 30 seconds you get a random item. Sometimes it is trash and sometimes it is super rare so you never know what is coming next.
They also built custom systems around it. There is a custom mineral called Chronium with time themed powers. A full armor set can randomly dodge hits and the sword can sometimes hit twice so PvP gets really unpredictable.
There are no land claims here so bases can be raided and griefed if you do not defend them. To help with that you can buy turrets in the shop. The shop offers change every in game day.
The main world called Space uses a custom generator with floating islands. Mines also regenerate ores after they get mined out. The server is in alpha so bugs can happen and they want feedback.
