I found NerdNu and it feels like a medium sized server that really cares about community and mostly vanilla gameplay. It is for players who miss that old Minecraft feeling where people actually know each other.
The PvE server is updated to 1.21.10 and it is survival building without PvP so you only worry about mobs. People work together on towns and big city builds and the PvE map reset on September 19th. They also do games nights with different player hosts like spleef thimble and ice boat races on Fridays at 7:30pm and Saturdays at 1pm US Eastern time.
There is also a Creative server on 1.21.10 with open world building and a mix of natural terrain and world painted areas. You can protect your builds and WorldEdit is free to use. Creative has community events too like spleef and speed build on alternating Saturdays and their current map revision started on June 22 2024.
Their snapshot server is currently closed because of recent updates and they will announce when it comes back.

There is a protected curated world where you can build your country. There is also a chill survival world and a flatgrass world. The server has a dynamic map so you can see what people are making.
The ranking system is merit based so you submit your builds and you can earn perks and ranks. The community is really into stories and details with people doing stuff like maps languages history and culture. Minetown is a long running community focused server that has been around since 2010. It offers a laid back and friendly atmosphere with a strong focus on survival and player driven economy instead of pay to win mechanics or endless minigames. Both Java and Bedrock players are welcome. The main world, Idarun, is a long term survival economy map with land claims, shops, warps, teleports, clans and a no griefing, no raiding policy. The economy is built around player run shops and cities, giving everyone an equal chance to succeed. Regular UHC and minigame events offer ingame and cosmetic prizes. For players wanting more challenge, the Vanilla Plus world provides an enhanced hard mode survival experience with claiming but no warps, homes or economy, with firespread, griefing, raiding and always enabled PVP.
