This is a small semi vanilla server that I found. It runs on 1.12 but you can join on other versions too so it is easy to hop on.
The only plugin you will really notice is an economy plugin. So it still feels like normal Minecraft survival but with money and trading. There is not a ton of extra stuff or crazy mods.
Most of the time there are around 5 to 10 players online every day. It feels like a smaller chill community where people can actually recognize each other.

On this server griefing is allowed and pvp is allowed. There is no pay to win and there is no random teleport. You only get the /spawn command so people who ran super far away can still come back to civilization.
They try to keep it close to vanilla but a few things are changed. You are allowed to use the nether roof. Phantoms are removed so nights are less annoying. Only about half the people on the server have to sleep to skip the night.
There are still a few rules so the server does not die. Exploits are not allowed. Lag machines and duping are not allowed. Spamming chat and harassment or racial slurs are also not allowed. The server has a trading system where players set up trade signs. You can sell items with sell and sell hand to earn money. You can lock your chests and doors with lock so people do not mess with your stuff. Staff can rollback grief using CoreProtect so people feel safe building big projects.
