I found this SMP that is built for PvP and raiding but it still keeps that vanilla vibe. There are no land claims so you can build anywhere and you can also get raided anywhere so it stays intense.
It lets Bedrock and Java players play together. There are player shops plus an auction house and duels if you want fast money.
The server has custom enchants that are meant to stay balanced like 3×3 drills and lifesteal. The terrain is custom but it still looks normal and not weird.
It runs well even on low end PCs. PvE gets harder the farther out you go and there are random world events every 30 minutes that can help you or hurt you or just be strange.
The owner is still working on it and wants feedback and people to help out. You can use the in game command to join the community.

Silver Cove MC is a cross platform semi vanilla survival server running on Paper 1.21.5 and it also lets you join on higher versions too. It tries to keep the normal Minecraft feel while adding only quality of life plugins to make things easier.
What stood out to me is how much the server listens to players. They actively ask for suggestions and add new content regularly so it does not feel like it dies after two weeks.
They also say it will not turn pay to win. Ranks are earned for free through hard work and dedication. There is a store if you want to support the server but it is optional.

I found EchelonMC and it is a hand built survival server that is made to last. It is hosted in Canada and the owner Eddy has been building it for about two months with players helping by giving suggestions.

RiotBlockMC is a new Prison server that is still in beta and it is not the kind where you max out fast. The progress is slower and feels more fair so you actually have to work for it.
It has a balanced economy with classic rank progression and custom enchants that are meant to work for long term play. The server is being updated a lot right now and they say there is no pay to win stuff.
There is also a PvE area called the Wardens Lair where you fight mobs and loot dungeons to make money instead of only mining. The mobs scale in difficulty so it can get risky but the rewards are better.
They are testing the economy the mob difficulty and how fast progression should be. Progress made during beta will not be reset. It is Java 1.21+.

Turtle SMP is a new modded survival server with a smaller tight knit community. It is trying to make it so players get a real say in how things run.

This server idea is all about slowing down Minecraft so it takes way longer to beat the bosses and finish big goals. It is meant to feel like vanilla but with more challenge and a bit more stuff to do.
The world would have less ores so gear takes longer to get. Enemies would spawn more and they would be harder along with the bosses. There would also be more rewards for beating bosses so the grind feels worth it.
