I found a small Minecraft server that is trying to be the kind of place with pretty much everything.
There is not a lot of info posted with it so you mostly just join and see what it is like and meet the people there.

ArcticMC is a new survival server that started just a couple days ago. It feels chill but it still has town and faction stuff so people can claim land and make groups.
You can build your own town and team up with other towns or you can try to take territory and start fights. PVP matters here and they run an honor system so fights are supposed to stay fair and not super toxic.
It also has McMMO skills so you level up while you play and get special abilities when your skills get high. There are custom items too and they even have furniture that is entity based so they plan limits to help with lag.
The world uses Tectonic generation so the terrain looks realistic with big mountains and nice valleys. The community is meant to be calm and friendly so you can grind build or just hang out.

The Anchor is a refreshed semi vanilla SMP that has been running for a little over a month and is looking for new players.
The main overworld is permanent so builds and progress stay put and it can grow into a long server history. When big Minecraft updates happen the border gets expanded so people can go find new stuff.
To help with big mining and farming the server also has resource worlds that reset monthly. There is also a server map so you can see what is going on.
Players can earn playtime ranks and get more permissions over time which makes it feel like your time matters. Land claims help protect your base and CoreProtect can roll back damage if something goes wrong and there is a good reason.
The server is connected to Discord so chat and announcements stay linked and you can verify to connect your account and get roles that match your in game rank.

MineMonthly is a paid Minecraft server that is all about competitive events and high stakes fights. It is trying to be different from the usual servers and it feels built for active players and content creators.
You can join the community as a viewer and see general chat and updates. If you pay 10 dollars a month through PayPal and include your Discord name you get access to the private server IP and you can play in all events.
Events happen every 2 weeks and they go hard. There is a 100×100 lifesteal survival that runs for a week. There are 20 player free for all showdowns. There is also a weekly EnderDragon tournament where the first person to kill it wins their next month of events for free.
When there are 10 weekly EnderDragon winners they all go into a grand showdown for 50 dollars cash. They also do custom gamemodes and experimental events and they post schedules and announcements in their announcements channel.

I found a small semi vanilla SMP that is in testing right now
They are getting things ready and plan to start in about a week
It sounds like a chill survival server for people who want that mostly vanilla feel with a smaller group

Solaris SMP is a survival server that feels like it is trying to last. It is meant to be relaxed and more about building together than rushing everything.
It stays close to vanilla but it has some nice extras. There is proximity voice chat and the chat connects with Discord. You also get a live map and stuff like armor stand posing and mini blocks for building.
There is a separate creative planning server that uses Axiom and WorldEdit. For safety it has CoreProtect so grief can be rolled back.
The server runs on 1.21.11 and it is hosted in US Central Dallas so NA and EU players can join. The world is open and it gets pruned monthly. The economy is diamond based and the community votes on changes. Progression is slower paced and the vibe is chill with low drama.
They want players who are 21+ and who use Discord and voice chat. Being active and helping out matters a lot.

ArcticMC is a survival SMP that mixes town claiming with faction style fighting. It is only a couple days old so it feels like a fresh start and people are still getting set up.
The main thing is you can build a town and make allies or you can take land and start rivalries. PvP matters here but they push an honor system that is explained in their rules so fights are not just random chaos.
It also has McMMO skills so you level up as you play and get special abilities when you level certain skills. The world uses Tectonic generation so the terrain looks more realistic with big mountains and valleys.
They also have custom items and even furniture that is entity based so they plan limits to help with lag. The community is described as calm and friendly and more about vibing while you build and grind.

Mythvale is a worldbuilding survival server where players make the history. It is all about building towns and nations then dealing with politics trade and war. The world is custom made so it feels like a real place to explore and settle.
You can start small with a new town and claim land then grow into something bigger. Players can form alliances and make deals or start rivalries that turn into battles for territory. Wars between nations are part of the experience and it sounds like the map will change as people expand.
It supports both Java and Bedrock crossplay and it is launching soon on version 1.21.11. The community is still growing so joining early means you can help shape how everything ends up.

I found a small Minecraft server that is trying to be chill and social.
People can join the Discord to talk and also sign up for elections so there can be a government.
They also ask you to not grief so it feels more fair for everyone.

FabricCraft is a vanilla style survival server that runs on Fabric and it is built for people who want farms and redstone to actually work like they should. It feels like the world is supposed to keep its history too since there are no resets.
It is semi anarchy so most stuff is up to the players. There are no land claims so alliances trade raids and rivalries happen naturally instead of a plugin deciding everything.
They do not allow hacked clients or mods that give unfair advantages. Griefing near spawn is not allowed within 1k and it is handled by active moderation.
Simple Voice Chat is available across the server. There is also a creative world with no plots so players can test builds before bringing them into survival.
