I found this semi anarchy survival server that tries to feel like real Vanilla Minecraft with only a few changes. It started on October 11th 2024 and it is hosted in New York City.
It stays online all the time and it lets you join on Java versions from 1.7.2 up to 1.21.11. They say 1.21.10 is the best to use so you do not run into problems.
The world is huge with a 2 million block border and it does not do map resets. There is no teleporting and no pay to win. PvP and griefing are allowed so it can get messy fast.

It is built on newer tech and it tries to stay stable even when people are doing a lot. It runs with a high render distance of 32 chunks and uses async and multithreaded stuff to help with performance.
There is no store and no ranks so nothing is locked behind money. The owner is also slowly testing bigger systems like small events and dupe related mechanics and some custom vanilla style enchants. If something feels bad it gets removed and anarchy stays the main point.

The world is hosted on a dedicated 12 core machine in Germany with 3TB of storage. It has daily backups and a strong anticheat so it is meant to last a long time and not get wiped every season.
