I found a medieval themed modded server where the big idea is building kingdoms then fighting wars with sieges. The main mod lets you make npc soldiers and workers so you can have real armies and not just players.
The server runs on Java 1.12.2 and it started last week so people are still forming kingdoms. There is claim protection but it gets turned off during a siege for wars so battles can actually happen.
It leans into castles and towns with building and furniture mods plus extra blocks for stuff like bridges and windows. They are also pushing lore and rp more and there is a backstory on their Discord but you do not have to rp if you do not want to.
Wars are long term and sometimes there are big battles with lots of npcs plus siege machines and knight gear. The goal can be taking multiple bases then going for the enemy capitol in a final battle. If you want action without pvp there are pve structures bosses and they plan some pve events too.

MinedHype SMP is a friendly long term public survival server that has been run by the same owner for 7 years. It started back in 1.14 and it has had over 19,900 unique players join before.
The gameplay is mostly vanilla and it runs on Minecraft 1.21.11. There is no whitelist and there is no pay to win. There is also no economy or money plugin so trading is done with player ran shops using items.
You can protect your builds with claims and CoreProtect is used to help with protection. Grief is allowed if you did not claim the area so you need to claim your stuff.
The Overworld and Nether are meant to be long term and they will never reset. There is no set world border and players spawn randomly within the first 40k blocks. You can use /rtp to get a random spot within 50k blocks from the center spawn point then set a /home.
It supports Bedrock and Java cross play. There is a shopping district and a gaming district with teleports. There is also a web based online map plus free server events with prizes. Chat reports are disabled and rules are posted on the server site.

CaliCraft is a player run server where the community actually shapes what happens. Every two weeks everyone votes for an Emperor and this role has real power. They can change plugins make laws and even imprison people including staff. There is a Constitution they have to follow but they can also make temporary laws during their reign. Some laws can become permanent through a Discord poll.
The server has a lobby that helps you jump into different gamemodes fast. There is a modded survival world with custom enchantments skills jobs an auction house an economy custom dungeons and vote crates with strong gear. It is also a claim world and it runs like a kingdom under the Emperor.
There is also a vanilla survival option with quality of life stuff like quests chest sorting and daily rewards. You can play skyblock too with classic island style and extra addons. There is a Cobblemon mode on a separate Fabric server so you need the Cobblemon modpack to join it.
It supports Java and Bedrock and it works from version 1.17.1 to 1.21.10. There is also a custom resource pack with unique mobs animals elites and dungeon bosses so it does not feel like normal vanilla.

Normal Survival is a friendly survival server where everyone can fit in. It feels more like a relaxing place to build and explore with other players instead of a hardcore fight server.
It has custom quality of life crafting recipes plus stuff like chopping a whole tree at once and mining connected ores faster. You can set multiple homes so getting around is easier. You can also do teleport requests with other players when you want to meet up.
There are player run shops so people can trade and build a real economy. Voting lets you pick rewards from a voter shop.
PvP is not the main point here. You can toggle it on or off and just play calmly. Claims are there to help protect builds. You can even pick up villagers and other non hostile mobs. Keep inventory is a player toggle too. Phantoms are disabled so nights are less annoying.
The server gets updates weekly and they keep adding improvements over time.

Stormy Lagoon is a fair long term SMP that supports Java and Bedrock crossplay. It is built to feel balanced and it stays away from pay to win since ranks and perks can be earned.
The server has custom progression with Stormy Items where you can level up your tools weapons and armor and get abilities. There are daily missions and weekly challenges that reward Pearls plus milestones for long term progress and a Pearl shop where you can spend what you earn on perks ranks and cosmetics.
Gameplay has mcMMO skills for things like combat mining and fishing. The economy is player driven so people can buy sell and trade. You also get activity based rewards like Pearls Diamonds and rank progress and you can rank up just by playtime.
There are yearly resource worlds so the main world does not get wrecked for materials. There is an RTP menu to move around five worlds.
