Zest Creative is mainly a city build server with a big custom terrain world and a tight knit active community. People join to build together and make the map look awesome over time.
You start by joining the discord first and doing a short application. It is mostly there to keep griefers out. After that you can get access to WorldEdit and other helpful commands.
There is optional geopolitical roleplay with lore and worldbuilding. You can mark a claim and it gets shown on the map so you can start your own story. You can also mark towns and settlements. If you do not want roleplay you can just build and chill.
The rules are pretty laid back and there are events once in a while. Staff and players are around a lot to chat critique builds and sometimes team up on big projects.

Garconia is a Minecraft server that is trying to run a real democracy inside the game. Players can help build a changing state and take part in politics and the laws that shape the server.
It also has a big focus on business and money style gameplay. You can make your own company and hire other players. You can track inventory and sell items. You can manage separate business finances and even run real storefronts.
The community is meant to control the future. Staff are not allowed to influence politics so it is not just a power trip for the owners. Players can start parties and work together to pass laws.
