Foggy Willows is a server for people who actually want real vanilla survival. It runs on the normal minecraft server jar with no plugins and no datapacks at all. Everything you do is just regular Minecraft with all the weird vanilla stuff left in.
The world has no border and there are no commands like tp or sethome. If you want to go somewhere you have to walk or build your own system. There are no donations and no extra perks so everyone plays on the same level.
The server is set to hard mode so mobs and survival are more dangerous. Players are expected to deal with their own social problems so there is not a lot of hand holding. You can build how you want and play how you want as long as you can handle that.
It is always updated to the latest stable vanilla jar and it is self hosted on a machine just for the server. Technical Minecraft players are welcome here because nothing gets in the way of redstone or farms.
There is also a discord for players who want to talk more outside the game.

Ethis is a semi vanilla SMP that feels a lot like a small Hermitcraft style world. It runs on Fabric 1.21.10 and it is based in Germany.
The community has been together for around five years. People know each other well and new players get welcomed into that group. Some players like huge projects and redstone builds. Others just like to mess around and hang out. You do not have to be super good at the game. You just have to be kind and open.
The server uses a voice chat mod so you can just walk up to someone talk for a bit then run off again. It makes meeting people less awkward and makes random moments a lot more funny.
The gameplay is kept simple and close to vanilla. There is no land claiming no teleport commands and no home commands. You actually travel to people and builds which makes the world feel connected.
They host events and game nights both in game and on Discord. When players feel burned out they can still join for a game night and stay in touch.
