I found a Forge 1.20.1 modded server project that is building an RPG style modpack and it is still a work in progress so the pack is not out yet
The big twist is that some players can become bosses. They will get their own boss arena area and a wheel will decide who gets picked. It sounds like they want about four or five player bosses in total
The pack is based around Craft To Exile with Mine and Slash. It also uses Epic Fight with a bunch of addons. It has magic more biomes lots of real bosses structures better raids dimensions more mobs more weapons and other helpful mods too
They only want people who will actually stay active and keep playing. You need at least 16 GB of RAM to run it and it is for ages 14 plus

This is a big modpack server with over 200 mods and it is built to feel like a souls like dark RPG. It has a chill vibe and a community where you can pick how you want to play.

The server gets active updates and runs events. There are custom built dungeons that reset weekly and there is an extensive questline to follow.

Veilfall is a Minecraft server project I found that is going for a dark fantasy MMO style feel. It is all about exploring a big world while getting stronger over time.
The main stuff seems to be custom dungeons with tough bosses plus unique loot and progression. There are safe zones where you can breathe a bit and dangerous regions where things get scary.

Dead Horizon is a semi anarchy SMP where survival is actually hard and every decision can matter a lot. The world has a 10k by 10k border so you will run into other players pretty often and hiding forever is not really an option.
The server is built around conflict and high stakes gameplay with teams pvp and raiding all allowed. There are not a bunch of weird gimmicks or tons of rules. Hacking is not allowed and totems are not allowed so fights feel really intense since you cannot just pop a totem and be fine.
The server runs Java and Bedrock cross play and supports versions from 1.9 up to 1.21.11 with a native version of 1.21.8 so a lot of players can join easily. There is proximity voice chat so talking to people nearby feels natural and makes encounters way more scary or funny.
Each season has a new gameplay twist and Season 3 is a fresh start with a new world and new dynamics. There are only five maces in the whole season so special items stay rare. Old players and their reputations still matter so if someone was dangerous before you will probably remember their name.
Dead Horizon is public and you can choose to build quietly form a team or hunt for fights. The style is simple. Survive. Fight. Raid. Try not to lose everything when someone finds your base.

Alathra is a Minecraft server where people build towns and kingdoms and make their own stories. It uses Towny so you can claim land and grow from a small village into a huge city or even an empire.
The world is custom with glaciers volcanoes mesas and other cool terrain so exploring actually feels different. There are more than 140 custom weapons and special armors so combat is way more interesting than normal vanilla.
There is a huge brewing system with the Brewery plugin where you can craft tons of custom drinks and run a tavern. Fishing is also custom with more than 50 kinds of fish and special rods and bait so even fishing feels like its own game.
The server has a bunch of immersive plugins like lockpicking siege weapons horse combat a war system fast travel ports carriage stations and customizable NPCs. There are random mob encounters like Bog Frogs and you can also summon strong bosses for rare loot.
Alathra has rich lore with a wiki and players make religions conflicts and organizations. Most of the story is made by the community so your character can actually matter in the world.

CaveMC is a really cool semi anarchy survival server where the whole overworld is underground. There is no normal surface at all. Everything is caves and underground biomes with resources and structures everywhere.
The world is enhanced vanilla with custom generation made by real Minecraft developers. It feels familiar but also super weird and dangerous. Survival is brutal and you have to be very smart to stay alive for long.
Season 2 adds a huge new place called the Wasteland Dimension. It is not just a biome. It is a whole new area with its own custom map and special features.
In the Wasteland you can find brand new powerful gear and explore giant mega structures. These huge builds hide secrets and rare loot so exploring is a big part of the server.
The Wasteland also has its own currency and a new player economy. Trading and fighting over resources is a big deal here.
There is a new spawn that fits the Wasteland theme and helps set the mood when you first join.
