HoneyBlossom SMP is a vanilla plus survival server that is trying to make Minecraft feel fun again. It is 18 plus and it supports cross play for Java and Bedrock. The world has no resets so you can build long term and not worry about losing progress.
The server has claims so your stuff stays safe. There is teleport to other players and you get one home. There is a resource world and a nether resource world for gathering blocks. You can also use nightvision and there is a pvp toggle. Simple Voice Chat is available too.
They do end events for new players and they are running their first Valentines Day build event. The server is hosted on the east coast US and people play from all over. It is still pretty new and they keep making changes like new high performance hardware and a custom biome resource.
