I found NisseSMP and it is a HermitCraft inspired survival server with a Vanilla plus feel. It supports Java and Bedrock crossplay so a lot of people can play together.
The server is built around trust and fair play. There is no griefing and no PvP so it feels chill and safe if you just want to survive and build.
There are no claims and it is open access with no whitelist. The economy is player driven with shops trading and virtual currency. It also uses vanilla style quality of life plugins but nothing that changes the game too much.
They said the community is active and peak hours can hit around 60 to 70 players online. There is also a live map you can use to check the world.
