I found a survival server that goes hard on world building and geopolitics. Players make nations and the whole world is about diplomacy war economy and just staying alive.
It runs on 1.21.11 and it lets people join on different versions with ViaBackward. The world starts at 5000 by 5000 and it can expand when more players show up.
Travel is a big deal because there are no elytras. There are also no villagers so you cannot just trade forever. Crafting is tougher with custom recipes and netherite is 1 to 1 so it is not free.
Claims and borders are handled with a lands system so nations can hold territory. Roads and rails matter too since you move faster on proper roads and minecarts go way faster on powered rails.
There is a grindstone rework that lets you pull enchantments off and turn them into books. Farming and fishing are reworked so food and loot take more planning. You can also silk touch spawners and move them which changes defense and farming a lot.
