I found Shards SMP and it is doing an open beta test tonight at 7PM EST.
It is a Java server and it runs on version 1.21.11. There is a player guide you can read so you know what to do when you join.

Atlas MC is a new Towny Earth server that is all about geopolitics and nations on a real life map. You pick a real city or town to start and then you expand until you control a huge area.
The server has custom plugins that change how politics feels. Towny Geopolitica lets players make vassals claim titles and try to become a great power.
There is also a system called Battle Points that tries to mix pvp players with normal players in a resource focused way. You can declare wars for land riches or renown. You can stay peaceful or fight your way up.
It is in beta right now and they say joining early will get you rewarded when the full release happens. They also say the hosting is top tier for smooth gameplay.

AtlasMC is a Towny geopolitics server where players build nations and get into politics and diplomacy. It is all about alliances wars and who controls what land.
During the beta the map is only Mediterranean Europe. The plan for full release is a full Earth map.
It also has custom plugins made for long term gameplay. One is called Towny Geopolitica with vassals titles and Great Powers. There is also a custom PvP battle points system for fights and wars.
The full release is planned for March 14.

Cobblemon Towns is a new beta server with custom features and a big focus on community. It is built around a town plus adventure experience where you can play as a battler or just chill and collect.

It is in beta right now so it is still getting started. There is an economy with a server shop plus player shops and a jobs system so you can earn money from stuff like mining farming and fishing.
There is MCMMO skill leveling and graves to help keep your gear safe when you die. You can claim land to protect builds and it is set up to be no griefing.
There is a mining world for resources and a custom world with unique terrain. The world is pre generated to help things run smoother and you can use random teleport in the main world or pay to use it in the mining world. You can also set up to three personal warps.
It supports Java and Bedrock crossplay and has daily and playtime rewards plus vote rewards with keys and loot.

Drakona is a survival server where people build towns and start nations. It feels more community first and it is made for players who like trading and slowly growing a place with friends.
The world has custom terrain with big landscapes and deep cave systems so exploring and picking a town spot is fun. You can keep things peaceful or add risk since PvP is off in towns by default but you can turn it on if you want.
The economy is a big part of it. You can make money with jobs then trade in the Auction House or sell items with a sell menu. Player run shops are planned and the server says it is not pay to win.
There is also a skills system where you level up by playing normally and specialize over time. The server is still in beta but it is playable and they are improving it using feedback.

I found a modded survival server that is tied to a story based questing pack called Banished To The Wastelands. It is in public beta and they want playtesters. You can test it on the server or you can do it in singleplayer survival.
The server usually has a small group on at a time. Right now it averages around a few players.
The pack has a lot of content already with about one and a half dimensions worth of stuff and over 20 bosses. Some bosses are custom made. There are 156 mods and the pack is built so most of them feel changed to fit the same theme.
When you join you pick a race and a fighting style. That choice decides what combat and utility skills you can unlock. Your abilities grow as you defeat more enemies.
