I found a Java 1.18.2 Forge survival server that was made for a friend group but now it needs more people so the world feels alive. The vibe is chill and 18+ and it is for building farming exploring and actually surviving.
It has horror stuff so caves are not safe. If you go mining alone in the dark you can get hunted and jump scared.
It also has RPG combat with an overhaul and a bunch of big scary mobs and bosses. There is tech too with Create and there are dragons to fight. If you want cozy base time there is a big farming and tavern style set of mods plus extra adventure mods like fossils.
There is no malicious griefing or hacking allowed. If you join to blow up bases or steal early loot you get banned. If people later agree to factions and wars and roleplay then that is allowed as long as chat stays respectful.
It is hosted on Aternos so the server shuts down when empty. The owner is willing to give trusted players permission to start it so people can play when they want. Ping might be rough if you are far away but basic communication is all that matters.

Spawn is protected so you can load in and not get messed with right away.
They do a server event every week or at least most weeks.

GoPlay is a Minecraft 1.21 server that is trying hard to keep survival fair clean and long term. The big thing is it is not pay to win and perks are earned instead of bought.
The main mode is SMP with a brand new spawn. It has random teleport in the Overworld Nether and End. You can claim land and set up player shops. You can also use flight time inside your own claims and you earn that by voting.
There are custom 1.21.4 packs for bases and cosmetics plus player vaults for extra storage. The End dragon can be respawned so people can keep going back to the End.
