I found a public Minecraft server that was made because the owner got super bored and wanted anyone to join.
There is no whitelist so you can hop in anytime. PVP is allowed and griefing is allowed too so it is pretty much chaos and you should expect fights and wrecked builds.
If you want a server where people can just jump in and do whatever then this one is that.

I found a Bedrock Edition SMP that is keeping it super small with only 10 players total. It is set up so the first people to fill out the entrance form get the spots and then it is full.
The server is meant to run smooth since it is allocated 4GB RAM. It is free to join and it is hosted on Falix Nodes.
The play style is pretty wild because there are no restrictions on exploration or PvP or stealing. More details are said to be inside the form. They also plan to do monthly events so it sounds like stuff will happen often.

I found a brand new hardcore survival server where your first death is your last. It is one life only so every fight and every risky trip matters.
The overworld is huge with a big border so people can spread out but still run into each other. The End is also limited so it does not feel endless.
Pvp is meant to stay more classic with sword and bow fights. End crystals and respawn anchors are not allowed for pvp.

I found 2 Paws 1 Job and it is an anarchy survival server where players run the whole world. There is pvp and griefing and real danger so you have to watch your back.
The cool part is the world is meant to feel permanent and it has no planned resets. Stuff you build can turn into a landmark or get wrecked and that history stays on the map.
It supports Java and Bedrock and MCPE so you can join from lots of devices. Cracked players can also join so it is easy to hop in and the world stays unpredictable.
