I found a Minecraft server called Everbloom.
There is not much info posted about it so you kind of just join and see what it is like.

I found a modded survival server called BeagleSMP and it is built around fantasy lore with nations and conflict. The land is full of dragons and other beasts so you can go exploring and get into trouble fast.
It uses the Ice and Fire mod so you can find dragons fight them and even tame your own. There are also custom structures and dungeons and more monsters to discover while you travel.
Players are pushed to make nations and settlements together. You can be a monarch a warrior or just run a tavern and do your own thing. The world border is kept kind of small so people stay close but it expands over time.
PVP is allowed but they do not want random killing. It is mostly meant for planned wars and big story moments and going too hard can get you punished. The server is whitelisted so you have to apply first.

Snagtopia is a new Minecraft server running on 1.21.11. It is set up like a nation style place where you can join in and start your own adventure.
It has a few active members right now and it is looking for a lot more people to come play. If you want a smaller community feel this one seems like it.

This server is all about infinite islands that never reset. You keep expanding as you grow and you can build your island up for the long run.
There are custom cave systems with multiple levels. Ores regenerate so you can keep mining. You will also run into custom mobs and bosses down there so it feels like you always have something to fight.
Fishing is a big deal here with over 100 unique textured fish to catch and collect. There are also 60 fishing mobs to kill which makes it more than just sitting still.
Progression is guided by hundreds of quests. There are seasonal payouts if you want to compete but casual play is supported too. It is profile based so if you get bored of one island you can start a new one and swap back anytime.
It runs on version 1.21+ with 1.21.10 native. They are also recruiting staff so joining early and being active matters.

Vaulted Vanilla is an SMP that tries to feel like modded Minecraft but you still join with a normal vanilla client.
The world generation is heavily changed with new terrain and big structures to explore. The dimensions are overhauled too using Terralith Incendium so the overworld and the Nether feel way more interesting.
It also has quality of life plugins and data packs plus waystones and proximity voice chat. There are custom items and SlimeFun4 for more stuff to do. The server has a subtle economy and fishing competitions to keep survival from getting boring.
It is on version 1.21+ and crossplay is enabled. They are a newer community and they want feedback while everyone builds it up together.

Delve is an 18 plus text based MCRP server for Java Edition and it is modded. The world is getting ruined by strange dungeons that keep forming and nobody really knows why.
The story is set in the year 1710. People are leaving their broken homes to look for a place not damaged by the same thing that is destroying everything. Your character is one of many trying to learn what is happening and find answers.
There are 9 official races with their own history and culture like Man Elves Fae Were folk Dryads Gulls Gnomes Unmarked. The different groups are separated by borders but they have to work together to survive and figure it all out.
Delve does not use classes. It uses a big skill tree with 183 skills so characters can feel really different from each other. The official server is not open yet but the community just launched.

I found a modded server that is based around a custom pack that feels like Cobblemon with extra tech and magic on top. It just had a restart so the owner could fix issues and remove some overpowered stuff.
There is a spawn area with NPCs and there are player shops too. The pack has a lot of addons for Create and Cobblemon and also a bunch for Mekanism and Iron's Spells and Spellbooks.
It sounds big but still playable if you change your settings right. They want everyone to keep it respectful and have fun. You should have at least 16 GB of RAM to run it.

I found a small vanilla Minecraft server that is meant to be long term. It is simple and it is just a place to play normal survival.
There is not a lot of extra stuff being promised here so it feels more chill. If you want a small server where people can stick around this one is trying to be that.

The Garden SMP is a Java 1.21.11 survival server with towny roleplay and a big focus on worldbuilding. People make towns and nations in the overworld then go on adventures in other dimensions and build stories together.
You start with three lives and you lose a life if another player kills you. You can protect builds with Towny. There are chest shops so you can sell stuff without a forced economy. You can lock chests with trail keys but lock picks exist so you still have to be careful.
There is Animal Hunger for raising livestock for harvest and Devotions where you can be a priest cultist or devote worshipper and get rewards for piety. Multiverse lets players explore their gods realm. The server is meant to be relaxed with optional challenges and it says there is no pay to win. Staff and mods are active and the community is a small thriving group.
