I found a server built around a huge custom modpack that feels like a bigger All The Mons style setup. It mixes creature collecting with a lot of tech and a lot of magic so you can build machines and also mess around with spells.
There is a spawn area and some NPCs. Player shops are being worked on right now. The pack has tons of addons for different mods so there is always more stuff to build and chase.
The server owner just did a restart to fix issues and remove some overpowered mods. They want everyone to keep it respectful and just have fun with the people you meet.
You should have at least 16 GB of RAM. It is a big pack but it can run fine if you tweak your settings.

I found a modded survival server running NightfallCraft The Casket of Reveries. It is built around souls like combat plus adventure and quests so you can explore and progress for a long time.
This server is meant to be small and friendly. There are no wipes planned so you can settle in and build big without worrying. The world started on February 15 2026.

The Garden SMP is a Java 1.21.11 survival multiplayer server that is built around worldbuilding adventure and roleplay.
Everyone starts with 3 lives and the only way to lose them is through PvP. When you run out you become a ghost and you are past the veil. Players can bring someone back using a craftable revival book.
Some vanilla stuff is turned off to fit the roleplay like elytra and ender chests. It pushes people to build roads and ports and actually meet each other.
I also saw chest locking with trial keys plus lockpicks for breaking in. There are chest shops alcohol brewing pet taming for basically any mob and a bunch of QoL features.
When you join you wake up in the clouds then you jump down the Monolith to start. You can pick a race for your character then you wake on the docks of Isla De Viva Eterna and sail out to the mainlands to claim land or live in a town.
It sounds like a relaxed server with optional challenges no pay to win and staff that stays active with a small community.

You start with 3 lives and you only lose them through PvP. If you run out you become a ghost and the story keeps going. Players can also bring someone back using a craftable revival book.

The vibe is mature and more story based. They already have a base template for lore and it grows based on what players do so your choices matter.

This is a crossplay SMP where Java and Bedrock players can play together. It is a no PvP server so it feels way more chill and you can focus on building and surviving.
It has land claims so your stuff can stay safe. You also get up to 4 homes you can set which makes getting around a lot easier.
The Nether is not always open. On weekdays it only opens from 5 to 7 PM EST and on weekends it is open all day. You can only use Nether portals at spawn and you get there with the spawn command.

Lumenor SMP is a 24 7 custom vanilla survival server on 1.21.11 and it lets newer clients join too with ViaVersion support.
You can play on Java and Bedrock and even cracked clients so it is easy to hop on from anywhere.
The big thing here is the role system where you pick Passive if you want peace or PvP if you want chaos. It makes it feel like different playstyles can live on the same server.
The world has custom biomes and huge structures like ancient temples so exploring never really ends. There is also a custom Nether that is very challenging.
Trading is player driven and it is more like villager style trading not a normal economy shop. There are PvP and Passive arenas with keep inventory only in the arena so you can practice without losing your stuff. They also have custom armor trims that give small buffs and strong anti cheat to keep things fair.
The server is hosted in Germany and the staff team is from Greece France Sri Lanka and Sweden so it feels welcoming for lots of players.
