I found a small Towny and SMP server called GamerHub Towny that is meant to be super chill. The big focus is no grief and no stealing so people can just build and relax.
Players mostly work on towns and try to grow them over time. There is also money ranks and towns to compete for so you always have something to aim at.
It has jobs and MCMMO and an in game ranking system. You can play on a vanilla map and there is also an Earth map option.
Trading is a big part too with player warps and player shops plus a sell only server shop. The community is friendly and active across AU EU and US timezones.

Luminary Falls is a cozy survival SMP for adults that want a long term world and a friendly community. It is whitelist only and 18+ and it has been active since March 2025. The server is on Minecraft 1.21.11.
It runs on Java and it also has full Bedrock crossplay. They allow client mods that do not give you an advantage like Litematica Xaeros Sodium and Dynamic Lights.
The big thing is there are no resets. They use resource worlds so the main world can stay the same so your builds can last for years.
People are on from around the world so it stays active at lots of hours. It is LGBTQ+ friendly and the staff has a lot of experience.
Besides the survival SMP there is also a Creative server with monthly build challenges. There is a Lobby server with infinite parkour and PvP. They also say an Events server is coming soon with occasional minigames and events. They use QOL plugins and datapacks and they avoid pay to win stuff.
