I found this server called Realm of Aureus and it feels like a big RPG world inside normal Minecraft. It is a survival server where you still explore and build like vanilla but there is a lot of lore and extra stuff to do.

The world has a border that slowly expands every Age so new land keeps opening up. That means people can find new places to build over time instead of everything being taken. You can protect your land and build towns then ally with others and even form nations.
There are more than 400 special achievements that go from easy things to really tough goals like rare gear or strong bosses. When you finish them your fame goes up so achievement hunters have a lot to work on.
The server works for both Java and Bedrock using Geyser and they put effort into making the textures and cosmetics match on both. The staff listens to the community and they say they plan new content based on what players ask for. It looks like a long term place where you can stay for a while and keep progressing.
