I found a server called Anarchy Network and it is a semi anarchy survival server that tries to stay close to vanilla Minecraft. It has very few changes and it is made for people who want a real survival world where stuff can actually happen.
It runs all day and night and it lets you join on Java versions from 1.7.2 up to 1.21.11. They recommend 1.21.10 so you do not get weird problems.
The world is huge with a 2 million block border and it is meant to last since there are no map resets. There is no teleporting and no pay to win. PvP and griefing are allowed so you should build smart.
The main extra command is spawn so players far away are not stuck forever. Nether roof access is allowed and phantoms are removed and only half the players are needed to skip the night.

This is a modded modern apocalypse server with a big horror vibe and a story that moves forward on real dates. Everyone starts trapped inside a government quarantine zone called Alpigus and the grid is only stable for a short time.
For the first 7 days players cannot leave the zone. When the wall loses power the world opens up and the Nether unlocks and the End becomes reachable.
Later the server hits a grid failure event and a nuke drops inside the wall and wipes everything in that area. If you did not escape before it happens you are basically done.
