SuperiorSMP is a survival SMP that tries to sit right in the middle of total chaos and strict rule servers. It feels like semi anarchy where you can raid and fight but it still stays fair.
There is pvp and raiding with an economy system and an auction house so people can trade stuff. You can also make teams or clans and use custom items and commands.
The server runs on the latest version and it also supports Bedrock. It is public so you can join without a whitelist.

I found a survival multiplayer server called OVERSTRESSED SMP and it just launched after weeks of work.
It has a custom questline with over 250 quests so you always have stuff to do. There is a player run economy with shops plus a currency system.
Spawn is huge and made by the staff team and it sounds like you are supposed to explore it. You can pick your route out of spawn and either take a bridge to town or go down into the forest.

Pixel Springs is a cozy modded SMP on 1.20.1 that is meant to be long term and it is made for people who want a world that never resets. It feels like a calm place for builders collectors and anyone who just wants to settle in.

Farming is a big deal too with a bunch of food and crop mods and you can earn in game currency by doing meals. The Goblins SMP is a team based and faction style server with about 30 active players. Everyone gets picked and put into teams of 5 so it stays balanced and fair.
It is lightly modded and goes for a medieval vibe with role play. Fighting matters a lot because combat is changed with Better Combat. You also use mods like Talhanations Recruits and Villager Workers to build up your kingdom and protect it or grow it.
There are also mods like Siege Weapons and Small Ships plus Almiris Weapons and Simple Voice Chat. Even though it has strategy and battles the server tries to keep things civil and respectful.
