Pixel Springs is a cozy modded SMP on 1.20.1 that is meant to be long term and it does not reset. It feels like a chill place for builders collectors and people who like relaxed survival.
The modpack has a lot of building and decoration options. It also has farming and cooking content plus a custom FTB Quests system so you can chase goals and get rewards while you learn mods.
There is in game currency you can earn from quests and daily rewards. People can start shops and build in the shopping district. There is also a resource overworld dimension that resets sometimes so normal resources do not feel limited.
The community is small friendly and welcoming and it is still early since it started a few months ago. The admin team helps out and they do frequent backups. You can also find a team using their discord features.

I found a modded Minecraft server that is built to be noob friendly and chill. They say no toxicity so it should feel safe to learn and play.

The big thing here is a custom points based system where every Pokemon has a point value. You build teams to fit a seasonal cap and right now Season 3 is live with a 38 point cap so fights stay fair and creative.
There are player run gyms plus an Elite 4 with real rules and real stakes. Gyms rotate by season and progression is meant to feel meaningful.

AvalonEarth is an EarthSMP style server with a big 1 to 500 map so there is tons of space to explore and claim land.
It uses Towny and the whole point is making towns and nations. You can start a nation right away because the server gives starter money so you do not have to grind first.
There is a lot of conflict and wars if you like PvP and politics. If you do not want that you can still play peaceful and try to avoid the fighting.
Money mainly comes from jobs plus farming and fishing. The server has seasons and season two is running now with a growing community.

Travel and the economy are built around a strict railway system. The world capital at spawn and the three nation capitals are linked by two way rails. Trade between nations has to go through the railway stations and the railways are permanent world infrastructure so messing with them is a serious offense.
When you join you start in an orientation hall. NPCs explain the three nations and what each one is like plus how railways vaults nation points and trading rules work. You can explore by rail first and visit all nations before you commit to one.
