I found this server called The New Dawn SMP and it feels like a small survival world where people actually care about what they build. It is a vanilla plus server so it is almost like normal Minecraft and they keep plugins low so it still feels like real survival.
The server is made for people who like big builds towns trading and working together on shared projects. It really gives off a Hermitcraft style vibe with people building an economy and telling stories with their bases.

This is an 18 plus Minecraft server with a really relaxed and friendly vibe. Most players are in their twenties but there are people up to 50 plus. Everyone just wants to chill and build.
The rules are pretty simple. No griefing. No stealing. No unwelcome pvp. People focus on having fun and making cool builds instead of drama.
Both Java and Bedrock players can join. Most players work on their own bases but they build close enough that neighbors are welcome if you ask. The community is very nice and players like to trade help out and share items when someone needs something.
The world is in hard mode and it is semi vanilla. There are a few plugins but you can turn them off if you want to play full vanilla style.
Every world they usually make a nether hub and a shopping district. The server is new so those are not set up yet but that is the plan.

This is a chill Vanilla plus style SMP that feels like Hermitcraft but smaller and new. It is for Java players who want survival that still feels like normal Minecraft.
The server uses quality of life mod packs that do not change the real vanilla gameplay. So you still mine and build and explore like normal. It is meant to be long term so people can stay and build big projects over time.
The world has a border at twenty thousand blocks so players stay close enough to find each other. There is land claim to protect builds. You can share your coordinates or a screenshot so they know what area is yours. The server also has BlueMap so you can see the world from a map view.
The community is 18 plus only. They want players who are mature and want to make shops host events and build friendships. The goal is to have a Hermitcraft style world with a shopping district and fun events.
If you like survival that is almost pure vanilla and you want a fresh new world and a small adult group this server is made for that.

Aserion SMP is a small peaceful server where players try to build a unified world together. The whole idea is that everyone works on each others builds and helps out instead of fighting.
The rules are really focused on being kind. Killing should almost never happen. Stealing is not allowed. Griefing is totally banned. So if you are tired of joining servers where your stuff gets wrecked this place is the opposite of that.
Right now the server is still a work in progress. That means things can change in the future as the community grows and figures out what is fun. You have to apply to join either with a video or a well written answer so the owner can keep the server calm and friendly.
If you just want a quiet survival world and a small group of people who like to build together Aserion SMP feels like that kind of server.
