Rattata SMP is a mature community survival server that tries to stay as close to vanilla as possible. It runs on Paper and it supports both Java and Bedrock players.
The rules are simple and it is mostly just do not grief and use common sense. There is no teleporting and there are no modified loot tables or custom world generation so it feels like basic vanilla.
It is set to hard difficulty and it has 33 percent player sleep. There is a live map and the server is whitelist only. Simple Voice Mod is optional and CoreProtect is there with /co i to help investigate problems.
The server launched on Dec 26th and players can apply through the Discord.

I found Anarchy Unbound and it is straight up survival anarchy with zero safety nets. There are no rules at all and it says no bans. It also says there are no resets so the world keeps its history.
People can grief anything and duping is allowed too. Players make alliances then backstab each other and that is just part of it.

WhimsyWillow is a small community focused Minecraft server and Season 3 is live with mods. The mod list was picked by the community so it feels like everyone had a say.
There is a ton to explore with over 100 biomes using Biomes O Plenty plus Terratonic and there are also structures around the world. You can also mess with the Create mod and build machines as long as it is reasonable.
The server has a Bluemap world map so you can look around the whole world. Progression is also boosted with more ores plus new tools and weapons.
Spawn is kept nice and there is a shop district with player made shops that can sell whatever they want. The staff and players are big on suggestions and they try to run events sometimes to keep things active. The chat is family friendly so no swearing and no inappropriate talk. The server has been around for over 11 years so it feels stable and trusted.
Raiding and griefing are not allowed and if something happens staff can roll it back. PvP is off in the wild but you can turn it on in your town or use the arenas if you want. The world has been updated and expanded through 1.21.4 so there is lots of fresh land to claim and build on. This server is a minimal ComputerCraft style experience with a few addon and quality of life mods. It includes Plethora plus SC Peripherals and Goodies and Classic Peripherals so you can do a lot with computers and peripherals.
It has an active community with about 3 to 7 players online daily and around 10 at peak hours.
There are custom features like a WebSocket based Chatbox API and a Kromer economy server and a custom Pastebin replacement with no ads. It also has a playtime based welfare system.
