I found Eternal PvP and it is a Bedrock and Java PvP practice server made for people who want real fights.
It has clean FFA so you fight everyone with no teams and it also has competitive duels for 1v1 skill fights.
The combat is meant to feel like Java and it has custom PvP tweaks plus Java style chat and tooltips. It also uses low fire so you can see better.
It is built for sweaty practice and it focuses on smooth performance with a 40 player max to avoid lag chaos.

I found Kioku Region SMP and it is a Cobbleverse server where the goal is to battle and build your progress for real. They say every cobblemon is obtainable and battles actually matter.
They also push a true zero pay to win vibe. You cannot buy cobblemon or competitive stats or any battle advantage. Donations are mostly cosmetics like rank tags colored chat particle effects plus extra claim blocks and some quality of life perks. Ranks can have kits but it is stuff you could grind in about a day.
The server has a community Gym Leader and Elite Four system that is made by real players. People build their own gyms run a type team and defend their title. You can challenge gyms then the Elite Four then the Champion for in game rewards. They also have gameplay roles like Trainer Gym Leader Elite Four and Professor and they are still building it out. The whole idea is that it mixes different SMP systems into one world so everyone can end up with a different playstyle. There are altar mechanics glitch abilities and strength mechanics plus extra quality of life plugins.
It also has custom content like legendary weapons with special abilities and unique player powers. The server tries to keep PvP and survival balanced and there is custom progression too.
Voice chat is a big part of it using Simple Voice Chat with proximity. You will need the mod and resource packs to play.
