Pumpkings 2.0 is a semi vanilla survival SMP that feels a lot like Hermitcraft. It is trying to be a close and mature community where people actually know each other and like to hang out. There are players from different ages and places so it feels pretty mixed and cozy.
The world has a central shopping district and a minigame area with a diamond based economy so you can build your own shop and games. There are community events too. The first big one is opening the end together with a big dragon fight. You can also earn custom items from events and games so it gives you stuff to grind for.
If you like starting near others there is a starter village where people can build and help each other. Travel is easier because there is a nether hub with highways so you can connect your base. There is also a creative server where you can test builds and look at other peoples ideas and a real time map of the world with BlueMap. The main survival server has some light quality of life things like more mob heads simple voice chat and universal dyeing.
The rules are pretty simple. Be respectful and friendly to everyone. No cheating like x ray or item duping. No stealing. Try to keep the server cozy and welcoming for all players. The server is 18 plus only so they can keep the community mature and chill.

Pixel Springs is a cozy modded SMP on 1.20.1 that is made for people who want a long term world that does not reset. It is meant to feel safe and welcoming so you can settle in and build for the long run.
The mod list is very builder friendly with stuff like Building Gadgets plus Chipped Handcrafted and Dusty Decorations. There is also a big farming and cooking focus with Farmers Delight and its addons Croptopia Cooking for Blockheads and the Lets Do mods. If you like collecting there is a custom FTB Quests setup to guide you and pay you back with rewards.
The server has in game currency that you earn from quests and daily rewards. You can use it to start a shop and join the shopping district with other players. There is also a resource overworld dimension that resets sometimes so resources stay available and exploring stays worth it.

I found a semi anarchy survival server that tries to keep the game feeling like real Vanilla Minecraft. It launched on October 11th 2024 and it is hosted in New York City.
It runs 24 7 and lets you join on Java versions from 1.7.2 up to 1.21.11. They recommend 1.21.10 so things work smoother.
The world is huge with a 2 million block border and they say there are no map resets. There is no pay to win and there is no teleporting. PvP and griefing are allowed so you have to watch your back.
The only non vanilla thing they allow is a spawn command so people far away are not stuck forever. Nether roof is allowed. Phantoms are removed and only half the players are needed to skip the night.
