Lifesteal Anarchy On A Permanent World
I found a server called MinecraftOffline and it is running on version 1.21.11. It is a lifesteal anarchy type place so fights matter and it can get pretty brutal.
The world is permanent and it says there are no resets. That makes it feel like everything you build or lose actually sticks around.
It also has custom written plugins so the gameplay is not just plain vanilla. The server is based in Finland so it should be good for European players who want low latency.

I found a competitive PvP server that runs in short seasons with full wipes. It is all about timed progression so stuff unlocks later instead of day one chaos.
The Overworld is open right away then the Nether unlocks after a set time and the End unlocks later too. They keep fights more grounded since netherite armor is disabled and End Crystals are not allowed and Respawn Anchors are not allowed. Diamond gear stays the main endgame tier.
PvP is expected and you can make temporary alliances but it sounds like solo players are the ones who really win. Hacked clients and exploit abuse are not allowed and you still have to follow basic conduct rules. This is a community centered survival server made by players for players. It is going for a Hermitcraft style SMP feel with a diamond based economy.
There is a shopping district plus public builds and bigger projects that people work on together. A lot of players use proximity chat so meeting people feels easy.
The server tries to keep the vanilla experience while still adding some cosmetic and quality of life stuff that the community asks for and votes on. There are homes too.

A player started a new nation named Solutus and they are trying to get it going. Right now they do not have members so they are looking for people who want to join and help build it up.

This is a new Minecraft server that runs small themed events that feel like an smp or a civilization style run. The events can be modded or vanilla depending on what is happening.
There is also a long term vanilla world that stays up for players who do not care about events. It is also good for something to do while you wait for the next event.
They want to add a skygrid world later but it is still being worked on. The server is open to everyone and they are also looking for staff.
