I found a simple survival server that sticks to a vanilla feel but still adds a few quality of life things. It works for both Java and Bedrock players so you can bring friends from either one.
The spawn area is built by the community and the server hosts events. There is a decorated End island and a Nether hub which makes traveling feel more fun. There is also a player run shopping district so you can trade and set up shops.
You get light commands like /sethome and /tpa to make survival less annoying. There is also /itemflip where you can gamble your items just for fun. Phantoms can be toggled too.
The rules and vibe are pretty clear. No pay to win and no silly plugins. It is not focused on PvP but PvP and raiding are allowed with limits. No griefing so builds are meant to last.

WindGrove is a Java 1.21.x survival server with a planetoids world so the biomes float as islands in the sky. It feels wide and quiet and you can look out into the void and spot bridges and builds from other players.
The server is meant for builders and explorers and it is not trying to be a sweaty min max place. Movement and distance matter and progression is supposed to feel intentional.
It uses a custom resource economy where diamonds act like a progression currency. Villager trading stays important and fishing plus other paths can help you unlock rare items. A lot of decorative blocks are easier to get through controlled trades so you are not trapped by biome luck but the real progression items still take work.
PvP is only by consent and griefing is not allowed. Lag machines and exploits are not allowed either. The server is whitelisted and kept small on purpose so it stays curated and long term.

Constructs of History is an upcoming geopolitical Minecraft server that is all about politics worldbuilding and roleplay. It is made for people who are tired of geopol servers that feel too scripted and predictable.
The project has been in development for about 6 to 7 months and it already has a community with over 200 members. The server is planning a modpack with around 100 mods and it is meant to be optimized so it can run smoothly even on weaker computers.
At launch it is planned to have a custom coded claiming tool and a war and conflict system to make fights over land feel more strategic. It also plans a player driven global market where prices change based on supply and demand. Roleplay and storytelling are a big part of it too so nations and characters can have real lore and ongoing stories.

I found a modded Minecraft SMP that is heavily built around a Pokemon theme and competitive play.
It feels like a place where people can train up and battle while still doing normal survival stuff with others.
The server is welcoming to everyone and they want you to follow the rules posted in their Discord.
