Foggy Willows is a survival server that is trying to be actually vanilla. It runs on the normal minecraft server jar and it does not use datapacks or plugins.
The spawn is not trying to be fancy and you are not forced to read a bunch of stuff. People are expected to handle their own social problems so it feels more hands off.
You can play how you want and build what you want. It is on hard mode and it stays on the latest stable vanilla version.
It is self hosted on a purpose built machine. There are no donations and no world border. There is also no tp or sethome. It has a Discord and it is for Java.
Zest Creative is mainly a city build server with a big custom terrain world and a tight knit active community. People join to build together and make the map look awesome over time.
You start by joining the discord first and doing a short application. It is mostly there to keep griefers out. After that you can get access to WorldEdit and other helpful commands.
There is optional geopolitical roleplay with lore and worldbuilding. You can mark a claim and it gets shown on the map so you can start your own story. You can also mark towns and settlements. If you do not want roleplay you can just build and chill.
The rules are pretty laid back and there are events once in a while. Staff and players are around a lot to chat critique builds and sometimes team up on big projects.
Outatime Gamers is a Java survival server made for players who are 30 and up. It is for millennial xennial and gen x people who want a space that is not full of kids. The vibe is casual and friendly and people like to chat about life too.
The server is vanilla plus with quality of life mods. I saw stuff like Animal Pens Comforts Gravestones and Storage Drawers. It recently upgraded to 1.21.11.
People build together share resources and keep it chill. You can play a lot or barely log in and nobody will get mad. There are no pressure vibes and it is whitelist based.

Just Another Hardcore is a hardcore survival server where you only get one life and when you die you are gone forever. It aims for a mostly vanilla feel but it adds a few changes that fit the hardcore vibe.
The world never resets so every base and every mess you leave behind stays. It has statistic leaderboards and player heads can drop when someone dies. There is also a way to will your enderchest to someone if you die and there is a way to disable phantoms.
The server is semi anarchy so you can do what you want but there are some limits to help keep the world ok like lava casting being disabled and wither spawning near spawn being blocked. It runs on 1.21.11 and it supports joining on 1.21 plus.
