Halcyon is a Minecraft lands PvP server that feels like old school survival but on the newest version. It was started by a postgraduate medievalist and the whole server aims for a strong medieval atmosphere.
The world is custom made with big unique biomes. There is no teleporting so travel actually matters. Players make roads waystations and hidden railways to move around. The F3 menu is turned off so you cannot just use coordinates to find your way. People trade lodestone compasses make maps and even learn how to navigate with the sun and moon.
The gameplay is meant to be harder and slower. There are some restrictions that reduce easy meta strategies and automation. Progression takes more effort so things like bravery smart trading big cities and mighty fortresses are what make you strong. You succeed by teaming up and rallying people to your banner instead of abusing exploits.
The community is based in Australia but there are players from Europe the Americas and Asia. There is no strict server lore you must follow. You just join pick a direction punch some trees and play Minecraft how you like. Over time simple projects turn into big stories as other players get involved.
The plugins and world are built to encourage emergent storytelling. Players already write books make art and even create their own myths and superstitions. It feels like a living medieval world that grows with what the players do.

OPNetwork is a brand new survival server that just opened on version 1.21.8. It feels like a fresh start and the owners seem very active and dedicated so the world does not feel forgotten.
The server is focused on simple survival with no pay to win stuff. It is more about pure gameplay where you build survive and grind with other players. There are some quality of life plugins that make things smoother but it still feels like normal Minecraft.
They are also looking for staff right now. They need mods helpers and builders so if you like helping run a server this is a good time to join. You can grow with the server while it is still new.
There is a launch event for new players. The first five players who come from Reddit can get a free rank if they say Reddit in chat after they join. After five people claim it the reward is gone.

AvalonEarth is a geopolitics style EarthSMP server that uses a 1 to 500 scale map so there is a ton of space for players to make nations and build up towns.
The server runs with Towny so nations and towns are the main focus. Anyone can start their own nation because you get starter money when you join. You do not need to grind forever or meet some weird player requirement just to create a nation.
This is the second season of the server. The first season started in September and built a solid community. Now season two is running and lots of new players are joining.
There are lots of conflicts and wars between nations for people who like pvp and fighting. If you are not into war you can still live a peaceful life and try to avoid the big battles.
Money is mostly made with jobs plus farming and fishing. More ways to make money are planned to be added. Overall the server feels like a mix of nation politics war and chill survival with an active community.
