I found this server that feels really old school and super cozy. It has a PvE world a Creative world and a Snapshot server. The whole place is mostly vanilla and it is all about chill gameplay and building with other people.
On the PvE server you play survival without any pvp. You only fight mobs and not other players. People like to team up build towns and even full cities. They reset the PvE map not that long ago so there is still room for fresh bases. There are regular game nights on Friday and Saturday with stuff like spleef thimble and ice boat races so it never feels boring.
The Creative server is for people who just want to build. The map is a mix of natural and custom terrain. You can protect your builds and you can use WorldEdit for free if you want. They also run community events on Creative like spleef and speed build plus other minigames on some Saturdays. There is even a big group build for Christmas and winter themes where anyone can join in.
There is also a Snapshot server which is for the newest test versions of the game. It seems like a place where you can try new Minecraft features early. Overall the server feels like a tight community where players know each other and like to hang out. If you miss that feeling of the first servers you ever played this one really tries to bring that back.

I found this server called Ultimate Hardcore and it is actually really intense.
This server is real hardcore. There is no pay to win and no resets. You do not get to use alts. When you die you are totally done and your run is over.
It is a true vanilla survival server with very few rules. You cannot cheat but griefing is allowed and PvP is allowed. That means people can raid you and attack you and it still counts as fair.
In less than a month more than 2500 players already tried to survive on here. So there are a lot of bases ruins and stories all over the world.

Mappercraft is a survival server with light roleplay where players make their own nations and fight for power on an earth style map of Southeast Asia.
From what I saw you pick any place you like and staff mark it as your settlement. Anything you build around that point is protected by them and they can roll back grief if you reported your claim the right way.
You can merge settlements into a full nation and then do diplomacy with other nations. People make alliances or go to war and sometimes it turns into big total destruction battles for land.
The server feels close to vanilla because staff handle most systems and there are no big gameplay changing plugins and no mods required. They only use some small plugins like fast tree chopping better minecarts no creeper damage no phantoms and a plugin that puts images on maps.
There are also server events and competitions every now and then where you can win rare items that are hard or impossible to get normally. Players are also allowed to host their own events whenever they want.

GOOMB SMP is a vanilla survival server that just had a fresh world reset and it uses amplified terrain so everything looks super tall and crazy. Right now the world has a 2k by 2k border so bases are really close together and it feels like a small town.
