I found this server called The Crafty Table and it feels like a cozy semi vanilla survival world with a bonus creative world.
The server uses a small set of plugins that are mostly for social stuff and convenience. There are plugins for land claiming shops protecting builds and some extra advancement challenges. There is also a live map so you can see the world from a browser.
The coolest thing is how much they listen to players. The community gets to suggest plugins rules and even world changes. People talk about ideas in their discord and then they do meetings on Sundays where players discuss and vote on proposals. So the server kind of grows based on what the community wants.

This server is called CaveMC and it is on Season 2. The whole overworld is underground so there is no normal surface at all. Everywhere you go is caves and tunnels and underground biomes and it feels really different from regular Minecraft.
It is enhanced vanilla and semi anarchy so survival is pretty brutal. Players need to be smart to live because the world is tight and dangerous. You can explore for resources and make bases in the caves and deal with other players however you want.
There is a brand new Wasteland Dimension that opens on November 8th. It is not just a biome but a whole new area. In the Wasteland you can find special powerful gear that changes how you fight and survive. There are huge mega structures with secrets and loot and you can explore them if you are brave.
The Wasteland also has its own currency and its own economy. Players can trade and build a new style of player driven market there. There is a new spawn that gets you ready for the challenges in this dimension.
The map is custom generated so it looks really cool and also has special features that change how you play. Overall it feels like a tough underground semi anarchy survival world with a huge new Wasteland dimension to explore and fight over.

VitaNova is a new SMP that feels like a fresh start. The world is brand new and the server is run by a small group that just wants to build a chill community. It feels cozy and not super sweaty.
You play normal survival but with a claim system using lands so people cannot just walk in and wreck your builds. There is an economy so you can earn money and trade with other players. Jobs let you grind different ways to make cash and it makes the server feel more like a little town.
The server also has PyroFishing so fishing is actually useful and kind of a whole thing on its own. There are AuraSkills too so your skills level up while you play and you feel your character get stronger over time.
From the first of January to the thirty first you can use the calendar command to claim free items each day. It makes logging in daily feel like it matters a bit more.

This is a Minecraft server where players build nations and get into politics and wars. It runs on a big 20k by 20k world so there is lots of space.
The server uses special claiming and diplomacy plugins. You can draw your borders make different kinds of treaties and set up custom agreements with other players. It feels like a world full of nations and factions all trying to get stronger.

This is a player made server that is built around community and it really feels like a big group of friends hanging out. There are usually a few people on all day and a lot more that play often so it never feels empty.
The server is set up like a Hermitcraft style SMP. People use a diamond based economy and there is a shopping district with shops and public builds and big projects. Most players use proximity chat so talking and joking while you work on stuff feels super natural.
There are homes and player warps and a bunch of cosmetic and quality of life plugins that got added by community requests and polls. The goal is to keep the game close to vanilla but still let the players shape how the server grows.
