I found a Minecraft 1.6.4 server that is super chill and feels like a simple place to play.
It says there are no rules but everyone is supposed to keep a basic respect thing going. So you can mess around and do your own thing as long as you are not being a jerk.

Solaris SMP is a small relaxed Vanilla plus survival server made for adults who want something stable and long term. It takes ideas from Hermitcraft and focuses on teamwork and creativity without making the game feel rushed.
It has proximity voice chat so people can talk while they play. It also has Discord linking so chat can go between the game and Discord. There is a live Bluemap you can open in a browser.
There are extra tools for builders like Armor Stand Poser mini blocks and mob and player heads. There is also an AudioPlayer for ambient music and custom tracks during builds or events. A separate creative planning server is included with Axiom and WorldEdit for designing builds.
For safety it uses CoreProtect and Ledger for grief protection and rollbacks. It also runs Carpet Mod and Vanilla Tweaks features like elytra from the dragon fast leaf decay silence mobs renewable sand and more.
Season 2 started last weekend and the End opens Mar 7th to keep the pace slower. The server is hosted in US Central Dallas with European and American players. The world border is open with monthly pruning. I found a Hardcore SMP where death is the end. There are no revives and no second chances. The world does not reset so everything that happens stays in the servers history.
The map is huge at 300000 by 300000 blocks. PvP is on everywhere and raiding and griefing are allowed. It feels like you always have to watch your back.
It stays close to vanilla but it has some plugins that fit the hardcore vibe. You can get player heads and you can loot a dead players Ender Chest. It also has Simple Voice Chat and deep stat tracking plus some quality of life stuff.

Stormy Lagoon is a long term SMP that lets Java and Bedrock players play together. The server feels focused on fair progression and it says there is no pay to win since ranks and perks can be earned.
It has custom progression with levelable tools weapons and armor that come with abilities. There are daily missions with three tasks and weekly challenges where everyone competes. You earn Pearls and work toward Pearl milestones then spend Pearls in a shop for perks ranks and cosmetics. You also rank up from playtime.
Gameplay includes mcMMO style skill leveling for stuff like combat mining and fishing. The economy is player driven so you can buy sell and trade. There are activity based rewards like Pearls Diamonds and rank progress.
There are yearly resource worlds so the main world stays cleaner. You can use an RTP menu to hop across five different worlds. Claims help protect builds and PvP is consensual so you can toggle it. The Anchor is a long term Java Survival server that tries to feel like a place you can leave and come back to and it still feels familiar. The vibe is that it is okay to take a break and people will still welcome you when you return.
It stays close to vanilla and avoids game breaking stuff. There are no constant resets and nothing is meant to change the core Survival experience.
Ranks are based on playtime and not on some weird money farm or crazy player shop setup. The economy is made by the players and there is also an Admin Shop that changes over time.
