I found a modded Minecraft server that a couple started together and they want more people so it feels alive.
It runs the Homestead modpack and it is about exploring tinkering building and some combat. They also added Waystones so travel is easier when you are trying to get back home.
The server stays up all the time and they paid for a year already so it should not vanish soon. There is no world border so you can roam as far as you want.

Legends of Stonehaven is a Medieval and Fantasy RPG server running its Season 2. It is based on a Fantasy Medieval RPG modpack and it is built around a big adventure vibe.
Combat is revamped with animations and a dodge mechanic. You can build your character with an in depth skill tree and origins so people feel different and strong in their own way.
There are custom weapons armor and trinkets plus bosses and divine blessings that are balanced for this pack. Enemies scale up as you explore further so it keeps getting harder.
Magic is a big part of it with two main magic mods for utility and combat. The overworld nether and end generation are overhauled and there are tons of new dungeons and structures plus five new dimensions.

There are quests that give crate keys and rare loot. You can trade through a server shop and an auction house so you can buy and sell with players too. There are orders where you do specific tasks and deliveries for big rewards. Duels are also a thing so you can fight someone and risk your cash for a fast payout.
The server has no land claims so you can build anywhere and raids can happen anywhere too. It supports Java and Bedrock cross play. The world uses natural looking custom terrain and the PvE scales so it gets harder the farther out you go.
